Mary DeHart's Slow-Cooked Lamb Curry
Ingredients
2 - Tbs. Instant Minced Onion
2 - Tbs. Water 2 - Pounds Lean Lamb, cut in 1-inch pieces
2 - Tbs. Shortening
1 - Tbs. Curry Power or to Taste
1 - Apple Sliced
1 - 14 oz. Canned Tomatoes
1/4 -Tsp. Garlic Powder
2 - Cups Water or Stock
1 - Tsp. Salt
1/8 -Tsp. Ground Black Pepper
1 - Bay Leaf
3 - Tbs. Flour
1/4 - Cup Cold Water
Instructions
Mix instant onion and 2 Tbs. water. Let stand. Brown lamb in shortening with softened onion and curry. Remove lamb and onions to the slow cooker. Add apple, tomatoes, and garlic powder. Stir in water or stock, salt, pepper, and bay leaf. Mix well. Cover and set on low for 8 - 10 hours Thicken.

Mary’s Story
Mary DeHart was my mother-in-law (Vic DeHart my father-in-law). They lived on DeHart Road in the Mission area of the City for many years. Mary passed on February 28/1988 in Cottonwoods and Vic passed in 1971. Mary nursed for many years and was one of the first nursing teachers at KGH in Kelowna. She was a wonderful person and an exceptional cook. Mary made this recipe often. Lamb was one of her specialties, made in various ways, but this recipe is easy and delicious. The DeHart's are a well-known pioneer family in Kelowna. Maxine DeHart (married to Chris) is currently a Kelowna City Councilor and her husband Chris (Mary and Vic's son) was born in KGH and raised in Kelowna working for TELUS for many years. Ross DeHart, also born in Kelowna, Chris' older brother is now living in Chetwynd. B.C. I hope you enjoy this wonderful recipe as much as the DeHart family has over many years. We miss both Mary and Vic.
