Saskatoon berry pie is a type of pie with a Saskatoon berry filling. The pie originated in Canada in the prairies and is often served with vanilla ice cream as a dessert.

The Saskatoon berry is known for its superior health qualities.  It’s loaded with many different antioxidants and higher in some vitamins and minerals (protein, iron, potassium, copper) than other berries. When you bite into a plump, ripe, juicy Saskatoon berry, still warm from the sun, you can just taste all that delicious health-giving goodness. The indigenous peoples knew about the goodness of this delicious and hardy berry. They pounded it together with buffalo meat and tallow to make pemmican, the food that sustained and nourished them throughout the long, cold prairie winters. Nowadays, it’s easier to just pop the berries into the freezer to pull out and brighten a cold winter day.

Ingredients and Direction

½ cup white sugar

1 TBSP extra white sugar

2 ½ TBSP cornstarch

Mix together

5 cups Saskatoon berries

Toss sugar mixture with Saskatoons

2- 9”frozen pie crusts (Tenderflake)

2 TBSP butter (cut into 9 patties)

Place one pie crust onto a pie plate (keep the other one in reserve). Pour coated berries on top of the crust. Add patties of butter to the top of the berries. Cover with a reserved pie crust – trim excess. Pinch the seams together and mark them with pie vents.

1 large beaten egg

1 ½ tsp dark brown sugar (demerara)

Brush pie crust with egg and sprinkle with brown sugar. Put on lowest rack for 15 minutes in preheated 425 F oven. Reduce heat to 350 and cook for 60 minutes longer. Pie filling should be bubbling (pie edges will brown). Cool on a baking rack and serve with vanilla ice cream :-)
